I actually forgot these photos were even on the camera – that is how long it has sat neglected on my desk, waiting to be plugged in! I made these cupcakes for a client, who happened to call the afternoon before we left for Minneapolis. Thankfully, I had everything I needed to easily whip up a batch of Chocolate Mint Cupcakes with Peppermint Buttercream Frosting. The decorations are plastic buttons I found at the last minute at Michael’s. I had hoped to find some fun sprinkles, but alas, it was not to be. I like these though. While not edible, they do add a lot of color, and even, shall we say, some PIZAZZ to these cupcakes for a birthday gal who just arrived back from Las Vegas.
